We use freshly fried tortilla wedges (they're sturdier than store-bought chips) as the base for vegan refried beans and chili, Roasted-Tomato Salsa , guacamole, and a great deal of fresh and pickled veggies. Layering the chips and toppings for even coverage is a little extra work, but it's worthwhile for the many more balanced bites you'll get from it.

Variety packs of fresh ‘exotic' or ‘speciality' mushrooms are actually sold in most supermarkets, or you may use an assortment of shiitake, oyster, enoki and some other exotic varieties you can get hold of.

I've followed Angela's blog and Instagram for a while now and I always enjoy her posts and recipes. I finally ordered her cookbook which is amazing! I read it cover to protect last night. Usually I only find a small number of recipes that I love in cookbooks. I really do nothing like spending a great deal of time searching for exotic ingredients and prepping a bunch of different things for one meal. I also shy away from using a lot of imitation cheeses, meats, and other processed foods. When I proceed through a cookbook I usually mark recipes that I want to try with a tab. I started scanning this cookbook with the intention to do just that, but I quickly fell in love and decided that tabbing would be useless because the while book would wrap up tabbed.
